Sweet Potato Cutlets
Potato cutlets (Tikki) are famous as a snack for family & guests, but sweet potatoes are a better alternative as far as the nutrition & fiber is concerned. Some other vegetables can also be added & I selected carrots.
With some onions & spices, cook the chopped sweet potatoes & carrots in a non-stick pan & just add a cup of water, BOILING is not required at all as the nutrition will be wasted, with a single cup of water, vegetables will tender slowly.
When they cool down, grind into a fine paste using a food processor, and make the cutlets, they will be sticky, so it is better to refrigerate them immediately. Take the solid cutlets & coat them with a beaten egg, fry in the blessed Olive Oil & you will definitely prefer these over the ordinary potato Tikkis.
