Ibn Al Qayyam wrote :

وأجودُه‏‏ الأبيضُ السمينُ، السريع النُّضج‏

The best type of Adas is the fat white Adas that digest faster.

وهو غليظُ الدم، وينبغى أن يتجنبه أصحابُ السوداء، وإكثارهم منه يُولِّد لهم أدواء رديئة‏:‏ كالوسواس، والجذام، وحُمَّى الربِّع، ويُقلل ضرره السلقُ، والإسفاناخ

Also, lentils produce thick blood & those who suffer from black bile should avoid eating them, for when they eat lentils excessively, lentils will beget Waswasah (whisperings), leprosy, Quartan fever (a fever that occurs on every fourth day) & other ailments. However, eating lentils with beetroot & spinach will lesson their negative side effects.

So I prepared a recipe by combining White Lobia (Black eyed peas) with beetroot. Lobia was soaked in water for few hours, & with the blessed olive oil, all ingredients were cooked for a while in a pressure cooker. And after adding water, the cooker was sealed to whistle. Because I am not an expert for a pressure cooker, I had to bring my mother in the kitchen for her OK, if not sealed properly; those pressure cookers can be extremely dangerous.

Ibn Al Qayyam’s experience was perfect; it was a precise combination that had a high digestibility.
