Burfi at the shops is mostly made with the cheap powdered milk, & they overload it with sugar, the extra sweetness hides the taste of remaining ingredients. Either you eat Burfi, Gulaab Jamun or Ras Gulla, all of them have the same dominant taste of extra sugar.

Prepare your confectionaries with Halal Cottage Cheese & keep the sugar low, and you will enjoy them more.

We prepared Coconut Burfi with Cottage cheese, ingredients are simple with Cottage Cheese as 500 grams, grated (dried) coconut as 250 grams and some almonds, Honey or Blackstrap Molasses are more healthier & of course expensive, but if you need the white color of Burfi, sugar is the cheapest alternative. Add sugar as 250 grams to yield a Brix of not more than 20 %, with low sugar, the taste of Cottage Cheese will GLOW in your mouth.

Blend them all together in a food processor, add some milk to reduce the load on machine, fry the mixture in Ghee with Cardamom seeds, some coconut will turn brown when fried & it will give a beautiful texture to your Burfi.

You can find white almonds (with the skin already removed) at some shops.
